四、总结与展望
茶多酚、儿茶素、茶多糖等茶叶功能成分年产规模接近9 000 t,80%以上的茶叶功能成分以原料形式出口,用于开发保健食品、功能型饲料、医药等[51-55]。目前,茶多酚保健产品研发仍存在一些不足,其在人体的生物利用度偏低,茶多酚多羟基结构影响了化合物在人体中的溶解度、降解率、吸收率和进入血液中的比例,从而影响这些化合物在人体中的生物可利用性[51]。茶多酚的分子修饰、摄入剂型改善是提高其生物利用度的可能途径。
此外,茶多酚终端产品的同质化、应用技术研发薄弱问题仍然存在。围绕茶产品的适口性、适用性、安全性需求[55],充分挖掘茶多酚的应用特性和功能特性,针对不同人群、不同应用领域的专用化、多元化产品研发是重要突破口。
